Australia’s Biggest Morning Tea recipes

On Thursday 22nd May, the Cancer Council will host Australia’s Biggest Morning Tea as a way to raise awareness and funds for the Cancer Council. While the 22nd May is the official morning tea date, events can be held any time during May or June.

Australia’s Biggest Morning Tea is about getting people together, sharing a cuppa and helping those affected by cancer. To get involved, you can host an event at your home, workplace, or anywhere you can serve a lovely cup of tea. To ensure your event is a success, try out some of these delicious recipes, perfect as a mid-morning snack:

Pear and Ricotta Muffins

These deliciously light and fruity muffins are great with both tea and coffee.


350g plain flour
3 tsp baking powder
75g brown sugar
½ tsp bicarbonate soda
135ml grapeseed oil
3 eggs, lightly beaten
100g natural yoghurt
2 pears, chopped150g fresh ricotta


1.      Preheat the oven to 165C and lightly grease a mini muffin pan. Line with greaseproof paper.

2.      Place dry ingredients in a bowl, keeping back a few slices of pear for decorating. In a separate bowl, add the wet ingredients. Stir the wet into the dry, being careful not to overwork the batter.

3.      Spoon the mixture into the prepared pan and decorate the top of muffins with a slice of pear. Bake for 30 minutes and check if they are ready by inserting a skewer.


Bruschetta with Tomato and Avocado

For a deliciously healthy start to the day, serve this beautiful, fresh bruschetta with a twist.



2 avocados, crushed 
zest and juice of 1 lemon 
1 punnet cherry tomatoes
¼ cup roasted hazelnuts, skin removed
100ml extra virgin olive oil
sour dough, sliced 
1 small garlic clove
2 buffalo mozzarella in brine



1.      Preheat griddle or BBQ plate.

2.      Place cut tomatoes, avocadoes and hazelnuts into a bowl, season with salt and pepper and add a drizzle of oil, zest and lemon juice.

3.      Brush sour dough with a little oil and toast for one minute each side to form griddle marks. While warm, rub garlic clove against one side of the toast and cut in half.

4.      Place a handful of tomato mix on each piece of sourdough and place a piece of mozzarella on top. Tear a few basil leaves and place on top, drizzle with oil and grate Parmesan over the bruschetta before serving.


Turbocharger Juice

To give your guests a burst of energy that will see them through the day and promote a healthy diet, try serving a delicious juice or super smoothie.



2 cucumbers
2 apples
4 slices of pineapple
2 cups chopped spinach
2 cups chopped kale
3 lemons



Juice all ingredients in a juicer or alternatively blend in a blender after removing lemon skin. Serves 6.


Pikelets with Fig and Honey

For a deliciously sweet, yet healthy treat, these pikelets will put a smile on your guests’ faces that will last the whole day. The combination of cinnamon, honey and figs packs the pikelets with heaps of flavour and is truly yummy.


¾ cup wholemeal plain flour
2 tsp baking powder
¼ tsp ground cinnamon
2 eggs
100g extra light ricotta
¾ cup buttermilk
2 tbls honey
6 figs, quartered


1.      In a large bowl, sift flour, baking powder and cinnamon. In a separate bowl, whisk eggs and ricotta. Whisk in buttermilk and honey and then add to dry ingredients.

2.      Spray a non-stick frying pan with a light oil and add cook pikelets for one to two minutes before turning. Cook until just cooked through and remove from heat. Continue until the batter is all gone.

Stack pikelets in centre of plate. Top with a spoonful of ricotta, sprinkle with cinnamon and drizzle over some honey. Finish with a generous serving of figs.
