Stuffed sweet potatoes

Ingredients:

  • 300g lean beef mince
  • 1 can black beans, drained and rinsed
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • Mingle taco seasoning
  • 1 cup chunky salsa
  • ½ cup water
  • 4 sweet potatoes, small 

Toppings*

  • 1 cup low-fat cheese, grated
  • 1 avocado, diced or mashed
  • ½ cup plain Greek yoghurt
  • Fresh coriander, to garnish 

To serve:

  • Side salad

 

Directions:

  1. Cook the beef mince, chopped onion and garlic in a large fry pan over medium high heat until meat browns. Drain the fat and add the beans, taco seasoning and salsa.
  2. Reduce heat to medium-low and cook for 5 more minutes until mixture has thickened and is heated through. Add ¼-½ cup of water to achieve desired consistency.
  3. While the meat is cooking, poke lots of holes in the sweet potatoes with a fork, place on a plate and cook in the microwave for 8-10 minutes on high, turning them halfway through. If potatoes aren't soft enough, continue cooking 1-3 minutes more in the microwave.
  4. Allow sweet potatoes to cool slightly, then slice them lengthwise and fluff the insides with a fork.
  5. Spoon the cooked taco meat over the sweet potatoes, then add desired toppings and serve with a side salad.

  • Sweet potatoes are also rich in vitamin C, potassium, fibre and antioxidants
  • Pairing sweet potato with healthy fats, such as avocado or olive oil, helps to boost the absorption of their vitamins and minerals.
