Ingredients (makes 12):

Cheesy scrolls

  • 300g mozzarella cheese, grated
  • 85g cream cheese (reduced fat, extra light)
  • 1½ tbsp baking powder
  • 2 eggs
  • 1 tsp xanthan gum
  • 150g almond meal
  • ½ tsp Italian herbs

Filling

  • 100g passata
  • 100g Danish feta cheese, crumbled
  • 200g spinach, chopped

Coleslaw and dressing

  • 500g shredded coleslaw mix
  • 100g natural Greek yoghurt
  • 2 tbsp lemon juice
  • 2 tbsp extra virgin olive oil
  • 1 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • 20g roasted slivered almonds

 

Directions:

  1. Preheat the oven to 180℃ fan forced and line a large baking tray with baking paper.
  2. Heat mozzarella and cream cheese in a microwave-safe bowl for 2 minutes on high. Stir to combine.
  3. Add eggs and baking powder. Stir to combine (mixture should foam up a lot).
  4. Add remaining ingredients and mix until well combined.
  5. Wet your hands and knead the mix until dough-like and no longer sticky (can take a few minutes).
  6. Flatten/roll dough out between two baking paper layers into a large rectangle. 
  7. Spread with passata, feta and spinach, and season with salt and pepper.
  8. Roll the dough into a log lengthwise and cut into 12 equal pieces.
  9. Place the scrolls, cut side-up on the lined baking tray and bake for 25-30 minutes or until golden.
  10. Place the shredded coleslaw mix in a large mixing bowl.
  11. In a separate bowl, combine the dressing ingredients.
  12. Toss the dressing through the slaw mix and season with salt and pepper.
  13. Allow the scrolls to cool for 10 minutes (or they will be very soft and can fall apart), then serve two scrolls each with the dressed slaw. Enjoy
