Creamy vanilla protein oatmeal

Nutrition content per serve*

Energy: 386 calories (1,615kJ) | Protein: 27g | Carb: 36g | Sugar: 14g | Total fat: 11g | Sat fat: 2g | Fibre: 11g | Serves: 1 | Total time: 10 minutes

Ingredients:

  • 1¼ cup water
  • ½ cup rolled oats
  • 1 tsp chia seeds
  • ½ cup frozen blueberries
  • 1 scoop vanilla protein powder (optional)
  • 1 tbsp plain Greek yoghurt (or ChobaniFit or YoPro vanilla protein yoghurt if not adding protein powder)
  • 1 tbsp slivered almonds

Directions:

  1. Add water, oats and chia seeds into a microwave-safe bowl. Microwave for 1 minute on high. Stir and microwave for an additional minute or until most of the liquid is absorbed. 
  2. In a separate bowl, microwave frozen blueberries for 1 minute or until melted.
  3. While berries are in the microwave, stir protein (if using) into oats.
  4. Top oats with yoghurt, pour over melted berries and sprinkle slivered almonds. Serve and enjoy!

Chef’s tips:

  • If you don't have vanilla protein powder at hand, ChobaniFit or YoPro are great additions for extra protein
  • Add 2/3 cup yoghurt into oats for an extra 15g protein
  • For an extra 13g of protein, mix ½ cup of cottage cheese into the oats

Why it’s good for you:

  • Blueberries are rich in anthocyanins, which are a flavonoid that gives berries its colour and antioxidant properties.
  • Oats are high in fibre and combine well with protein sources such as yoghurt, nuts and protein powder. The addition of chia seeds provides a source of soluble fibre and omega-3s.
