Easy-peasy ‘mac and cheesey’

Indulge in a scrumptious twist on a classic favourite with our budget-friendly pumpkin mac and cheese! Creamy goodness meets the warm flavour of pumpkin, creating a mouth-watering dish that won’t break the bank.

Ingredients:

  • 2 cups macaroni 
  • ¼ Kent pumpkin (enough to yield 2 cups steamed pumpkin) 
  • 1 cup milk of choice 
  • 1 cup grated tasty cheese 
  • 1 garlic clove 
  • 1 ½ tbsp butter 
  • Salt and white pepper to taste 

 

Method: 

  1. Dice pumpkin and steam for 10 mins until soft. 
  2. Fill kettle and boil water for pasta. 
  3. Let pumpkin cool for 1-2 minutes, measure out 2 cups of pumpkin, add to a blender, blend until smooth. 
  4. Boil 2 cups of macaroni in large pot of boiling water with a dash of salt, stir occasionally. 
  5. Add pumpkin and rest of ingredients to a small pot, bring to boil. 
  6. Stir until cheese is melted and sauce is bubbly. 
  7. Drain pasta when cooked al-dente, divide pasta and sauce between 4 bowls, stir through sauce, serve with extra cheese and season with salt and pepper.
