Gut-loving banana muffins

Ingredients

  • 1 cup green banana flour
  • 1 cup almond flour
  • 2 tsp cinnamon
  • 2 tsp baking powder
  • ¼ cup milk
  • ¼ cup honey
  • ⅓ cup olive oil
  • 2 large eggs
  • 2 large (250g) very ripe bananas
  • 1 tsp vanilla essence
  • Optional add ins: ½ cup walnuts, sultanas or choc chips.

Method

  1. Preheat oven to 180°C.
  2. In a large bowl, mix green banana flour, almond meal, baking powder, cinnamon.
  3. Add wet ingredients into a blender and mix until completely smooth. *NB if you want a sweeter muffin add ⅓ cup honey instead of ¼ cup.
  4. Add wet ingredients to dry ingredients mixture and mix well to combine.
  5. Divide mixture evenly between 12 non-stick muffin trays.
  6. Bake muffins for 25 minutes then remove from oven and leave to cool.
