Healthier ‘Big Mac’ tacos

Ingredients:
Big mac sauce
- 1 cup plain Greek yoghurt (e.g. Chobani)
- 2 tbsp finely chopped dill cucumbers/pickles
- 1 tsp Dijon mustard
- 2 tbsp no-added-sugar tomato sauce
- ½ tbsp apple cider vinegar (or white vinegar)
- 1 tsp paprika
- 1 tsp onion powder
- 1 tsp garlic powder
- Salt and pepper, to taste
Tacos
- 500g lean beef mince
- 8 mini low carb wraps (e.g. Simson’s Pantry)
- 1 tbsp extra virgin olive oil
- 8 slices extra-light tasty cheese
- 2 cups shredded lettuce (iceberg or cos)
- ½ cup sliced dill cucumbers/pickles
- 1 small white onion, diced
- Optional: 1 tomato, sliced
- Salt and pepper, to taste
Directions:
- To make the sauce, add the ingredients to a small bowl, mix well to combine, then refrigerate.
- To make the tacos, divide the beef mince into 8 equal portions.
- Spread a portion of the beef mince over each tortilla, firmly pressing down and leaving a 0.5cm border.
- Heat a large frying pan over medium-high heat and add the olive oil.
- Sprinkle each beef-topped tortilla with salt and pepper just before cooking.
- Carefully place 2-3 tacos in the frying pan, meat-side down and cook for 2-3 minutes, pressing them down with a spatula or resting a clean saucepan on top while cooking.
- Carefully flip each taco, lower the heat, and add a slice of cheese on top of the patties.
- Cook for a further 2-4 minutes (fry pan lid on, if possible) until the cheese melts and the tortillas crisp up.
- Remove the cooked tacos (keep them warm in a 100°C oven if needed), then top each with lettuce, pickles, onion, tomato (optional) and sauce when ready to serve.
- Repeat with remaining wraps and enjoy!
