Homemade beef biltong

Ingredients

  • 500g stir-fry beef strips
  • 30g coriander seeds
  • 10g salt
  • 5g black peppercorns
  • 50mL white vinegar or apple cider vinegar
  • 1 tbsp Worcestershire sauce

 

Directions

  1. Blend/process the coriander seeds, salt and pepper into a pulse for approximately 10 seconds
  2. Transfer the pulse mix to a large bowl and mix in the beef strips, vinegar and Worcestershire Sauce
  3. Rest in the fridge for 24 hours, then drain the liquid from the beef
  4. Transfer the beef strips to the air fryer and set to dehydrate at 55 ̊C for approximately 5 hours
  5. Two hours in, open the air fryer and stir the strips to break apart any that may have stuck together
  6. Allow to cool for a few hours before consuming. 

 

Chef’s tips:

  • Biltong should last for approximately 10 days in an air-tight container in a cool area, however during hot weather periods, store in the fridge.
