Ingredients

  • 24 store bought mini meringues*
  • 2 cups (500g) natural yoghurt**
  • 2 tsp maple syrup
  • 2 tsp acai/berry powder (optional)
  • ¼ cup fresh or frozen raspberries
  • Berries, passionfruit, drizzle of honey to serve***

 

Method:

  1. To make the labneh (strained yoghurt, also known as ‘yoghurt cheese’ in English), scoop out the yoghurt and place on a cheese cloth or clean Chux cloth. Place in a sieve over a bowl. Twist the top of the cloth, secure and place a heavy object on top to add weight and strain out the liquid whey.
  2. Place the sieve and bowl in a fridge for up to 5 hours, or overnight until the labneh resembles thick cream.
  3. Once labneh is at desired consistency, add to a mixing bowl and stir in maple syrup, and raspberries until smooth.
  4. Serve the labneh cream in between two meringues with a side of fresh berries, passionfruit, and a drizzle of honey!

 

*It’s ok to take a shortcut sometimes! We’re all about balance at the Health Hub.

** Light cream cheese is an alternative if you don't have time to make labneh.

Notes:

  • Pavlovas and meringues are always going to be higher in added sugar, as sugar is one of the main ingredients! However, there are ways to add in nutrients.
  • You can switch traditional whipped cream for yoghurt or homemade labneh to reduce the saturated fat.
