Nutty chocolate date bark

Ingredients: 

  • 15 Medjool dates (regular pitted dates can be substituted, however, may not be as soft and caramel like) 
  • 5 tbsp nut butter (peanut, almond or hulled tahini as a nut-free option) 
  • ½ cup nuts of choice (walnuts or peanuts are our favourite) 
  • 150g dark chocolate, melted 

 

 Directions: 

  1. Line a baking tray with baking paper. 
  2. If the dates aren’t pitted, remove the pits.  
  3. Gently pull open the dates and lay them open-side down in rows of 5×3 onto a lined baking tray, overlapping each. Using the bottom of a glass cup, gently flatten each date, to help fuse them together. Spread the nut butter on top, using the back of a spoon/spatula to evenly swirl. 
  4. Sprinkle over half the amount of nuts (reserving remaining half for later). 
  5. Press the nuts down into the nut butter using the back of a spoon, to ensure they’re sitting even and flat. 
  6. Break the dark chocolate into squares. Place in a heat-proof bowl and microwave in 30 second intervals until melted. Make sure to check it periodically, so it doesn't burn! 
  7. Drizzle the melted chocolate over the nut butter layer. Use the back of a tablespoon to evenly cover the surface. 
  8. Sprinkle the reserved nuts on top and place the tray in the freezer to harden for 30 minutes. 
  9. Remove from the freezer, place date bark onto a chopping board and cut into 12 squares.
  10. Store in the fridge in an airtight container and enjoy!  

Why it’s good for you:  

  • Medjool dates contain dietary fibre, antioxidants, and magnesium. They are naturally sweet and have a low-moderate glycaemic index (a measure of blood sugar impact). This translates to a smoother, steadier rise in blood sugar levels after eating. 
  • Nuts contain a good source of healthy fats, small amounts of protein, fibre, vitamins, and minerals. 
  • Dark chocolate can be rich in plant chemicals called flavanols. Flavanols are antioxidants linked to a lower risk of heart disease.
