Super-seed nut butter cups

Ingredients

  • 170g 70% dark chocolate
  • 1 tbsp coconut oil
  • ¼ cup natural almond butter
  • 1 tbsp honey
  • 1 tbsp chia seeds
  • 1 tbsp hemp seeds
  • 1 tbsp flaxseeds

 

Directions:

  1. In a microwave safe bowl, add dark chocolate and coconut oil. Heat bowl in microwave on high for 1-minute, until melted and smooth, stir to combine.
  2. Line a muffin tin with paper muffin patty cases.
  3. Pour approximately 1 tbsp of melted chocolate mixture into each patty pan.
  4. Place the tin in the freezer until chocolate is solid, approximately 3-minutes.
  5. Meanwhile, mix almond butter, honey, chia seeds, hemp seeds, and flaxseeds in a small bowl.
  6. Remove the tin from the freezer once the chocolate has set and add 1 tsp of the almond butter mixture on top of the chocolate, using a spoon to flatten.
  7. Evenly pour the remaining melted chocolate in each muffin case, until covered.
  8. Return the muffin tin to the freezer until chocolate is solid, approximately 10-minutes.
  9. Remove nut butter cups from the muffin tin and remove patty cases.
  10. Enjoy immediately or store in an airtight container in fridge for up to 1 week or in freezer for up to 3 months. 

 

Chef’s tips:

  • For smaller portions and more nut butter cups, you can use a mini-muffin tin that would serve 24 peanut butter cups.

 

Why it’s good for you:

  • Almonds are rich source of magnesium which can help regulate cortisol levels.1
  • Chia, hemp and flaxseeds are packed with omega-3 fatty acids that help reduce inflammation and have calming nutrient properties.2
  • Dark chocolate has higher concentration of cocoa and is packed with polyphenols, which assist in protecting our cells from high cortisol levels. They also are rich in flavonoids which can reduce stress, assisting in lower cortisol levels.3
