Ingredients:

Filling:

  • 3 heaped cups of frozen berries (defrosted)
  • 1/2 lemon juiced
  • 1 tb cornflour
  • Optional: 5 drops stevia or 1tb maple syrup

Crumble:

  • 1 cup almond meal
  • 1/4 cup oats
  • 1/4 cup desiccated coconut
  • 3 tb olive oil
  • 1/3 cup almond butter
  • 1 tsp vanilla
  • 2 tsp maple syrup or 2-3 drops stevia

Directions:

  1. Preheat oven to 160°C.
  2. Put the filling ingredients in a small baking dish and mix together.
  3. In a small bowl mix together the almond butter, olive oil, vanilla, and maple syrup. If needed, warm in microwave for 10 seconds to make it easier to mix them together.
  4. In a separate bowl add the almond meal, oats, and coconut, stir to mix, then pour over the almond butter mixture and combine until you have a crumble like texture.
  5. Pour crumble evenly over the berry mix, pop in the oven for approximately 30-40 minutes or until it bubbles and the edges and the top is golden.
  6. Enjoy crumble warm with a dollop of yogurt.

• Berries help our brain stay healthy as they contain high levels of antioxidants, particularly anthocyanins, which have anti-inflammatory effects.

• Almonds are a fabulous low carbohydrate alternative to regular wheat flour. They contain healthy unsaturated fats, fibre, protein, magnesium, and vitamin E, which can stabilise blood sugar levels and keep you fuller for longer.
