Ingredients:

  • 2 cups rolled oats
  • ½ cup sunflower seeds
  • ½ cup flaked almonds
  • ½ cup walnuts
  • 1/3 cup flaked coconut
  • ¼ cup pumpkin seeds
  • 2 tbsp flaxseed
  • 1 tsp cinnamon
  • ¼ cup almond butter
  • ¼ cup maple syrup
  • 1 tsp vanilla (optional)

 

Directions:

  1. Preheat oven to 160°C.
  2. Add rolled oats, sunflower seeds, flaked almonds, walnuts, coconut, pumpkin seeds and flaxseeds into a large bowl and mix well.
  3. In a small bowl add maple syrup, almond butter and vanilla (if using).
  4. Add wet ingredients to dry ingredients, mix thoroughly.
  5. Line a baking tray with baking paper, spread mixture out evenly.
  6. Bake for 10 minutes, remove from oven, if it looks golden it is ready. If not, mix well and return to the oven for a further 5 minutes.
  7. Once cooked, remove from oven, stir and let it cool.
  8. Serve ¼ cup granola with 1 cup of Greek yoghurt, fresh berries or dried fruit or on it’s own as a snack.
  9. Store in an airtight container for up to a week.

 

Notes:

  • You can use this recipe to make a grain free granola or trail mix – Simply replace the oats with nuts and seeds of your choice.
  • If mixture is too dry – add a dash of olive oil, this will help make it crunchy and add some healthy monounsaturated fats.

  • Nuts are a fantastic source of monounsaturated and polyunsaturated fats which are vital for healthy cholesterol levels, healthy mood and brain function.
  • Nuts and oats contain a variety of fibres that can support a healthy gut microbiome.
